How to Maximize Nutrient Absorption from Fruits and Vegetables?

🍏

Can we absorb 100% of the nutrients from the vegetables and fruits we eat? Plant nutrients like vitamins, minerals, and phytochemicals are encased within plant cells, protected by a fibrous cell wall. This barrier hinders digestive enzymes from reaching these nutrients directly.

In order for humans to obtain nutrients from plants, we must break down the plant into smaller pieces and destroy the cell walls to expose the nutrients for digestion enzymes to work on.

When we consume fruits and vegetables, the act of chewing physically breaks down the plant matter. While digestive enzymes further break down the nutrients into smaller molecules for absorption, chewing alone may not be sufficient for complete breakdown, potentially limiting nutrient absorption.

In his 2003 paper “Food Industry and Nutrition,” Professor Seung-Si Ham of Kangwon University in Korea stated that chewing and consuming raw vegetables takes 3-5 hours for digestion and absorption, with an absorption rate of less than 17%. However, when consumed as green juice, they can be absorbed within 10-15 minutes with an absorption rate of over 65%. He further emphasized that drinking juice is the best way to consume large amounts of fresh fruits and vegetables.

The best way to consume plant nutrients is by drinking low-speed juiced juice, which minimizes nutrient destruction. The Kuvings slow juicer uses a low-speed cold-press extraction method that gently presses plant cells using a millstone principle, minimizing nutrient destruction.

As shown in the figure below, the plant cells are crushed and broken down, and then pressed to easily extract the nutrients contained within the cells into the juice, increasing nutrient absorption.

Why not opt for freshly squeezed juice when you can enjoy the rich nutrients of fruits and vegetables in a single glass? Freshly squeezed juice offers superior nutrient absorption compared to other methods. Begin your day with a refreshing glass of juice packed with essential nutrients from a variety of fruits and vegetables to fuel your body and mind.
