On a rainy day, hot potato pancake freckled with savory bacon is a perfect snack.


INGREDIENTS

Potato250 g, Water150 ml, Bacon50 g, Red pepper15 g, Flour (all purpose)50 g, Salt2 g, Pepper1 g, Cooking oil15 g

TIPYou can add tuna fish sauce or oyster sauce in the dough to give a deeper flavor. Don’t over-flip the pancake. It might be torn up easily. Once one side is totally cooked, flip it over and cook the other side. Then, you can get a beautiful brown pancake.

METHOD

  1. Peel off potatoes and cut them into pieces; keep them in cold water to prevent color change.
  2. Cut bacon and spicy chilies into pieces.
  3. Blend the potato pieces with water.
  4. Put your mix in a clean bowl and add pancake powder, salt and pepper; and mix them together until you get the right thickness. Then, add cut bacon and spicy chilies to the bowl and mix them again.
  5. Coat heated frying pan with oil, pour the batter on the pan; and bake it.
