On a rainy day, hot potato pancake freckled with savory bacon is a perfect snack.
INGREDIENTS
Potato 250g, Water 150ml, Bacon 50g, Red pepper 15g, Flour(all purpose) 50 g, Salt 2 g, Pepper 1 g, Cooking oil 15 g
TIP You can add tuna fish sauce or oyster sauce in the dough to give a deeper flavor. Don’t over-flip the pancake. It might be torn up easily. Once one side is totally cooked, flip it over and cook the other side. Then, you can get a beautiful brown pancake.
METHOD
- Peel off potatoes and cut them into pieces; keep them in cold water to prevent color change.
- Cut bacon and spicy chilies into pieces.
- Blend the potato pieces with water.
- Put your mix in a clean bowl and add pancake powder, salt and pepper; and mix them together until you get the right thickness. Then, add cut bacon and spicy chilies to the bowl and mix them again.
- Coat heated frying pan with oil, pour the batter on the pan; and bake it.
