INGREDIENTS
Sweet pumpkin 400g, Flour(all purpose) 170g, Rice flour 30g, Water 200ml, Egg 50g, Salt 2.5g, Cooking oil 15g, Red pepper a little
TIP To boost the subtle sweetness of sweet pumpkin, dip it in honey, rather than soy sauce. To give a more chewy texture, you can add ordinary or glutinous rice powder more.
METHOD
- Peel off and remove the seeds of sweet pumpkin and chop them into big pieces.
- Put them into the container with water and blend. Blend more or less for your preferred texture.
- Put the mix into a bowl of flour, rice powder, egg and salt; mix it together until no powder lumps are seen.
- Put a spoon of the batter on an oil-coated frying pan; add thinly sliced red peppers on the top. Bake them.
